Hot Fudge Brownie Sundae with Caramel Cream Cheese Swirl
This recipe will be a great hit at your next summer gathering and I am sure the whole family will love it. You can have fun by change the ice cream flavors to make different flavors. Set up an ice cream bar with these yummy brownies and people can make their own creations. Add additional ice cream toppings such as caramel sauce, marshmallow sauce strawberry sauce, and pineapple sauce.

  • 1 Box (18.3oz or 19.5oz) Chocolate Fudge Brownie Mix
  • 1 Non-stick cooking spray
  • 1/4 cup(s) of water
  • 3 large eggs, divided
  • 1/2 cup(s) of canola oil
  • 3 ounce(s) of package Philadelphia cream cheese, softened
  • 2 tbsp. of butter, softened
  • 1 tbsp. of powder sugar
  • 1/4 cup(s) of caramel ice cream topping sauce
  • 1 tbsp. of flour
  • 1 tsp. of vanilla
  • 1/4 cup(s) of pecans, chopped (Optional)
  • 1 half gallon French Vanilla ice cream or your favorite brand
  • 16 ounce(s) of Jar Hot Fudge ice cream topping, warmed for 30 seconds in microwave (and/or add additional toppings like Caramel, Strawberry, pineapple)
  • 7 ounce(s) of canned whipped cream
  • 7 Maraschino cherries
Steps
  1. Brownies: Heat oven to 350°F. Generously spray large muffin pan with No-Stick cooking spray. In medium bowl, stir brownie mix, oil, water, and 2 eggs, and then do 50 strokes with spoon. Set batter aside.
  2. Cream Cheese swirl: In a small bowl, combine cream cheese and the 2 tablespoons butter. Beat with an electric mixer on medium-high speed until mixture is fluffy. Gradually add the powder sugar, beating until light. Beat in the 1 egg, caramel sauce, vanilla, and the 1 tablespoon flour just until combined while scraping sides of bowl while mixing. Set aside.
  3. Spread the chocolate batter in the prepared muffin pan by using a 1/2 cup measuring cup then spoon cream cheese mixture in small mounds (about 1 heaping tablespoon each) on top in the middle of chocolate batter. Using a table knife or narrow metal spatula, gently swirl the cream cheese mixture into the chocolate batter to marble by pulling chocolate from the sides. Sprinkle with pecans (optional).
  4. Bake on convection for 45 or bake regular bake setting for 50 to 55 minutes or until a toothpick inserted in the center comes out with moist crumbs attached. Cool in pan on a wire rack for about 20 minutes or until cooled.
  5. On dessert plate, arrange cool brownies. Top each with a scoop of Ice cream, at this point you can freeze until your guests arrive and when ready then spoon Hot Fudge sauce, whipped cream, and top with nuts and cherry. Enjoy

These brownies are so good even by themselves. My kids are going nuts over them.
