Southern Hashbrown Casserole
Great dish that can be served with an entree and a salad and you have a wonderful meal. It is quick, easy and cheap. Kids should love it...

  • 32 ounce(s) of Southern Style Hashbrowns
  • 8 ounce(s) of Philadelphia Cream Cheese
  • 1/4 cup(s) of Mayonaise
  • 1 cup(s) of Shredded Sharp Cheddar Cheese
  • 4 Slices of Bacon
  • 2 cup(s) of Pretzel Cheddar Crackers
  • 1/4 cup(s) of Butter
  • 1 salt
  • 1 pepper
Steps
  1. Pre-cook bacon in microwave till brown. After bacon cools, chop it up.
  2. Let cream cheese sit till softened at room temperature. Remove hashbrowns from freezer and thaw for 30 minutes.
  3. Mix together softened cream cheese, mayonaise, shredded cheese and bacon.
  4. Fold this mixture into potatoes not breaking or mashing potatoes.
  5. Spray your casserole dish with cooking spray.
  6. Place the potato mixture into your casserole dish.
  7. Melt butter in the microwave for approximately 30 seconds.
  8. While heating the butter, place your crackers into a plastic bag and crush with a rolling pin.
  9. Mix your crushed crackers into the butter and spread on top of your potatoes evenly.
  10. Place in pre-heated oven of 375F degrees and bake for 30 to 40 minutes.
  11. Remove from oven and when serving you may sprinkle it with chives for an added kick. Enjoy!
