Pistachio-Encrusted Muscat Grapes
These balls of ambrosia are the ULTIMATE party appetizer. They are the height of gourmet with NONE of the fuss. You can assemble them in minutes, forget about them until guests arrive, then simply take them out of the refrigerator and serve to a resounding chorus of ooh's and aah's.

  • 32 Grapes (Muscat or other, preferably seedless)
  • 4 ounce(s) of Philly Cream Cheese
  • 1/8 cup(s) of chopped mint leaves (more or less,to taste)
  • 3/4 cup(s) of chopped pistachio meats (no shells) (can chop in food processor)
Steps
  1. Wash and completely dry grapes.
  2. In a small bowl, mix the mint into the cream cheese using a fork.
  3. Place the chopped pistachios on a medium plate.
  4. Place a grape and a dollop of cream cheese in the palm of your hand. Roll the grape in the cream cheese until completely coated and set grape on the plate of pistachios. Repeat with remaining grapes.
  5. Roll each grape in pistachios until you cannot see cream cheese peering through. Arrange on a serving platter and serve immediately or refrigerate for up to eight hours.
