Chocolate Covered-Strawberry Cheesecake Bread Pudding
When I think of Philadelphia Cream Cheese, I think of cheesecake. I thought I would create a recipe based off of strawberry cheesecake with chocolate drizzled on top, because it's my absolute favorite. I also love bread pudding, so I combined the two desserts together. This bread pudding is composed of a layer of doughnut bread pudding, topped with graham cracker cheesecake, strawberries, melted chocolate, and garnished with whipped cream. It's amaaazing.

  • 3 tbsp. of unsalted butter
  • 2 cup(s) of heavy cream
  • 1/2 cup(s) of granulated sugar + 1/3 cup
  • 4 large eggs
  • 1 tsp. of vanilla extract
  • 8 cup(s) of cubed glazed doughnuts
  • 1 (8-ounce) package Philadelphia Cream Cheese, softened
  • 1/4 cup(s) of graham cracker crumbs
  • 2 cup(s) of sliced strawberries
  • 1 cup(s) of heavy cream, divided use (for topping)
  • 2 tbsp. of granulated sugar (for topping)
  • 3 ounce(s) of semi-sweet chocolate, coarsely chopped (for topping)
Steps
  1. Preheat oven to 350 degrees F. Butter bottom and sides of an 8x8-inch baking dish.
  2. Melt butter in a small saucepan over medium heat; whisk in 2 cups cream and 1/2 cup sugar, and bring mixture to a simmer. Remove pan from heat.
  3. In a large mixing bowl, whisk 3 eggs and vanilla until well combined - about 1 minute. Gradually whisk in hot cream until well combined. Stir in chopped doughnuts and allow mixture to sit for 10 minutes.
  4. In a medium mixing bowl, using a mixer on medium speed, beat cream cheese and additional 1/3 cup sugar until creamy - about 1 minute. Beat in additional egg until combined - about 1 minute.
  5. Evenly pour doughnut mixture into prepared dish, and top with spoonfuls of cream cheese mixture; sprinkle with graham cracker crumbs, followed by strawberries. Bake 35-40 minutes or until golden brown, bubbly, and set. Cool on a wire rack until ready to serve.
  6. When ready to serve, prepare the toppings. To make the whipped cream, in a medium mixing bowl using a mixer on high speed, beat 1/2 cup cream and 2 tablespoons sugar until stiff peaks form - about 2-3 minutes; set aside.
  7. Bring additional 1/2 cup cream to a simmer in a small saucepan over medium heat; reduce heat to low and stir in chocolate until melted and smooth. To serve, slice bread pudding into squares, place on plates, and top with a spoonful of whipped cream, and a drizzle of chocolate.
